AI platform upgrade

We are performing a major upgrade of our AI cluster, switching the underlying hardware from AMD to NVIDIA.

There will be a short period of downtime in the range of seconds to minutes while we switch from the old to the new platform.

The API remains compatible and no changes to applications are required. However, we are retiring the available multi-modal mistral model and replacing it with dots-mocr for vision-oriented tasks.
